When life gives you lemons...

OK...when my hubby, Mr. Bo, came home with a bag FULL of lemons...my first thought was "what the..?". Then he told me he purchased them from an anxious young man looking for a way to raise money for scout camp. So, of course I felt better about the lemon situation. By situation, I mean, I had a TON of lemons. I immediately started thinking of all of the yummy lemon desserts I could make...but instead...I TRIED to go a little lighter and did what all good summer gals do...I made LEMONADE!! Believe it or not, I have never made lemonade from fresh lemons. Wow. What a difference. Not only is it totally yummy...but super easy. Once you make the simple syrup...you can use it for Lemon Sorbet, too! I hit the jackpot...or the lemon pot. :)
Perfect Lemonade Recipe

1 cup sugar (can reduce to 3/4 cup)
1 cup water (for the simple syrup)
1 cup lemon juice
3 to 4 cups cold water (to dilute)

1. Make simple syrup by heating the sugar and water in a small saucepan until the sugar is dissolved completely.
2. While the sugar is dissolving, use a juicer to extract the juice from 4 to 6 lemons, enough for one cup of juice.
3. Add the juice and the sugar water to a pitcher. Add 3 to 4 cups of cold water, more or less to the desired strength. Refrigerate 30 to 40 minutes. If the lemonade is a little sweet for your taste, add a little more straight lemon juice to it.
Serve with ice, sliced lemons.
Serves 6.
